Pizza is something I really enjoy but unfortunately I know that because it’s usually loaded with ingredients which are high in fat, like pepperoni and cheese, it’s not a very healthy choice for me.
So that got me thinking about finding an alternative that not only looks appetising and tastes good, but is also something I would want to make for my best friend as a treat. One of the reasons I am writing this blog is to share some of the things I’ve discovered on my journey to getting healthier and losing weight too. Healthy eating helps to keep your skin looking young and your muscles and bones supple and strong.
You will need these ingredients to make 1 omelette:
- 2 large free-range eggs
- Low calorie cooking spray oil
- About 2 medium fresh tomatoes
- 3 or 4 mushrooms
- 1 slice of lean ham
- 45g mozzarella cheese
- Salt and freshly ground black pepper
- Some chives or a couple of spring onions, but only if you have them to hand
Here’s what you need to do:
Break the eggs into a bowl and beat them together with a whisk.
Get prepared! Chop up the tomatoes and slice the mushrooms. Get the Ham shredded and if you have them chop some chives or spring onions finely.
Then heat a large frying pan with some low calorie oil spray. When it’s hot pour in the egg mixture and quickly swirl it around the pan. Use a spatula to keep the eggs from sticking to the sides.
When the egg is beginning to cook through to the top, add the chopped tomatoes, chives, torn ham and sliced mushrooms. Then add your mozzarella cheese slices.
Season the top now if you like with low-sodium salt and some pepper.
Finally put your pan under a hot grill so that the cheese bubbles and then it’s ready to serve.
