Sarah’s Syn-Free Cooking

Hello, I’m Sarah.

Each week I will be bringing you a healthy recipe for you to enjoy in the comfort of your own home. I want to promote healthy eating and show you that choosing healthy ingredients does not mean you have to comprise on taste! I’ll be giving you easy instructions for making each meal and a list of ingredients you will need.

Day One

Today I’m making a full English Brunch Bake, so help yourself and a friend to a huge breakfast!

You’ll need:

8 large eggs lightly beaten

300gms of Desiree potatoes cut into 1.5cm cubes

100gms of lean bacon rashers with all visible fat removed and cut into 2cm pieces

A pack of Slimming World ‘Syn-Free Sausages’ available from Iceland, each sausage chopped into 3 pieces

1 medium onion peeled and sliced into thick rings

200gms of button mushrooms, cut in half

6 tablespoons of finely chopped parsley

Salt and freshly ground pepper

200gms mini plum tomatoes halved or quartered

25gms of reduced fat cheddar cheese grated

Low calorie cooking spray.

Here’s what you:

Peel the potatoes and cut them into 1.5cm cubes and place them in a large saucepan of lightly salted boiling water. Let them cook for 10 – 12 minutes or until they are just tender, then drain well and set aside.

While the potatoes are cooking, spray some low calorie cooking oil into a large frying pan, and put it over a high heat. Add the bacon, sausages, onion rings and mushrooms and stir-fry everything together for about 6-8 minutes or until lightly browned.

Add the cooked potato cubes to the frying pan mixture.

Whisk the eggs and chopped parsley together and season with salt and pepper. Pour over the mixture of potatoes, bacon, sausages etc in the frying pan and scatter the tomatoes on top.

Turn the heat down and cook gently for about 8-10 minutes until the eggs have cooked.

Sprinkle the grated cheese over the cooked mixture in the frying pan and then place it under a preheated hot grill for about 4-5 minutes until the cheese is lightly golden and set.

When it’s done, cut your Brunch Bake into thick wedges, serve and enjoy!

Here’s a tip if you are a vegetarian: leave out the bacon and replace the sausages with Cauldren Foods Vegetarian Cumberland sausages (this would be 1 ½ Slimming World ‘Syns’ per serving).
